Mediterranean Ground Beef Stir Fry


Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 small red onion, sliced
2 cloves garlic, minced
1 zucchini, sliced
1 red bell pepper, sliced
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon paprika
Salt and black pepper to taste
1/4 cup feta cheese, crumbled
2 tablespoons fresh parsley, chopped
1 tablespoon lemon juice
Directions:
Cook the Ground Beef:

Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked (about 7-8 minutes).
Drain any excess fat and transfer the beef to a plate.
Sauté the Vegetables:

In the same skillet, add olive oil and heat over medium heat.
Add the sliced red onion and cook for 2-3 minutes until softened.
Stir in the minced garlic and cook for another 30 seconds.
Combine and Season:

Add the sliced zucchini and red bell pepper to the skillet. Cook for about 5 minutes until slightly tender.
Return the cooked ground beef to the skillet. Stir in dried oregano, cumin, paprika, salt, and black pepper. Mix well to combine and let cook for another 2-3 minutes.
Finish and Serve:

Remove from heat and stir in lemon juice for added freshness.
Sprinkle with crumbled feta cheese and chopped fresh parsley before serving.
