This easy, one-bowl dessert creates its own light crust while baking, giving you all the coconut pie flavor with minimal effort.
Ingredients:
½ cup all-purpose flour
1 ½ cups granulated sugar
½ cup (1 stick) unsalted butter, melted
2 cups whole milk
4 large eggs
1 tsp vanilla extract
1 ½ cups sweetened shredded coconut
Pinch of salt
Instructions:
1. Preheat oven to 350°F (175°C). Grease a 9-inch pie dish.
2. In a large bowl, whisk together flour, sugar, and salt.
3. Add melted butter, milk, eggs, and vanilla. Mix until smooth.
4. Stir in shredded coconut until evenly distributed.
5. Pour the batter into the prepared pie dish.
6. Bake for 45–50 minutes, or until the top is golden and the center is set.
7. Allow to cool before slicing. Serve at room temperature or chilled.
