Mix until well combined. Form the meat mixture into a loaf and place it in the crockpot. In a skillet, melt butter over medium heat and add sliced onions. Cook until caramelized, about 20-25 minutes. Add beef broth to the onions and cook until the liquid is absorbed. Pour the caramelized onions over the meatloaf in the crockpot. Cook on low for 6-8 hours, or until the meatloaf is cooked through.
