Ingredients:
4 large green bell peppers (halved and deseeded)
1 tbsp olive oil
1 small onion, diced
2 cloves garlic, minced
1 cup cooked rice (or cauliflower rice for low carb)
1 cup cooked plant-based ground “meat” (or ground beef/turkey if not vegan)
1 cup tomato sauce (plus extra for topping)
1 tsp Italian seasoning
Salt & pepper to taste
1 cup shredded cheese (cheddar, mozzarella, or vegan cheese)
Instructions:
Preheat Air Fryer:
Set your air fryer to 360°F (180°C).
Prepare the Filling:
Heat olive oil in a skillet over medium heat.
Sauté onions for 3 minutes, then add garlic for 1 more minute.
Add ground meat, tomato sauce, cooked rice, and seasoning.
Cook for 3–5 minutes until fully combined. Adjust salt and pepper.
Stuff the Peppers:
Spoon the mixture into the bell pepper halves.
Top with shredded cheese.
Air Fry:
Place stuffed peppers in the air fryer basket (you may need to do batches).
