Ingredients:
14 oz (400 g) kielbasa sausage, sliced
1 tbsp olive oil
1 medium onion, diced
2 carrots, sliced
3 cloves garlic, minced
4 medium potatoes, peeled & cubed
4 cups (1 liter) chicken broth
1 cup (240 ml) heavy cream
1 tsp dried thyme
Salt & pepper, to taste
Fresh parsley, for garnish
Instructions:
1. In a large pot, heat olive oil over medium heat. Cook kielbasa slices until browned. Remove and set aside.
2. In the same pot, sauté onion and carrots until softened (about 5 min). Add garlic and cook 1 min more.
3. Stir in potatoes, chicken broth, and thyme. Bring to a boil, then reduce heat and simmer until potatoes are tender (15–20 min).
4. Return kielbasa to the pot, stir in cream, and season with salt & pepper. Heat through without boiling.
5. Garnish with parsley and serve hot with crusty bread.
