Wendy’s Spicy Stew



Ingredients:

2 pounds fresh minced beef

1 container tomato juice (about 46 oz)

1 can tomato purée (29 oz)

2 cans kidney beans, drained and rinsed

2 cans pinto beans, drained and rinsed

2 cans diced tomatoes (14.5 oz each)

1 large onion, chopped

1 green bell pepper, chopped

1 stalk celery, diced

2 packets chili seasoning mix (or homemade blend with chili powder, cumin, paprika, and cayenne)

1 teaspoon salt

1 teaspoon black pepper

1 tablespoon vegetable oil





Instructions:

1. Heat the oil in a large pot over medium heat. Add minced beef and cook until browned, breaking it up as it cooks. Drain excess fat.


2. Add onion, celery, and green pepper. Cook for about 5 minutes until softened.


3. Stir in tomato juice, tomato purée, diced tomatoes, kidney beans, and pinto beans.


4. Mix in chili seasoning, salt, and pepper. Stir well to combine.


5. Bring the stew to a boil, then reduce heat to low. Cover and simmer for 1 to 1 1/2 hours, stirring occasionally.


6. Taste and adjust seasoning before serving.
