🧀 Cheesy Baked Chicken Breast and Peppers

INGREDIENTS:

  • 2 large chicken breasts, boneless & skinless (butterflied or pounded evenly if thick)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp dried oregano
  • Salt & pepper to taste
  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • green bell pepper, sliced
  • ½ red onion, sliced (optional)
  • 1 cup shredded mozzarella (or cheddar/Monterey jack blend)
  • ¼ cup grated Parmesan
  • Fresh parsley or basil for garnish (optional)

INSTRUCTIONS:

  1. Preheat oven to 400°F (200°C).
  2. Season the chicken:
    • In a small bowl, mix garlic powder, paprika, oregano, salt, and pepper.
    • Rub both sides of the chicken breasts with olive oil, then sprinkle the spice mix evenly.
  3. Prep the veggies:
    • Toss the sliced bell peppers (and onion, if using) with a bit of olive oil, salt, and pepper.
  4. Assemble:
    • Place the seasoned chicken breasts in a baking dish.
    • Scatter the peppers around and slightly on top of the chicken.
    • Cover with foil and bake for 20 minutes.
  5. Add cheese:
    • Remove the foil.
    • Sprinkle mozzarella and Parmesan over the chicken and peppers.
    • Return to the oven uncovered and bake another 10-15 minutes, or until chicken reaches 165°F (74°C) internally and cheese is bubbly and golden.
  6. Garnish & serve:
