A creamy, colorful, and protein-packed salad that’s perfect for holiday gatherings.

Ingredients:

  • 3 medium carrots
  • 7 eggs
  • 200g canned ham (or cooked ham, diced)
  • 1 red bell pepper
  • 200g canned peas (drained)
  • 180g canned corn (drained)
  • 3 tablespoons mayonnaise
  • 3 tablespoons natural yogurt
  • ½ teaspoon black pepper
  • ½ teaspoon salt

Instructions:

1. 

Prep the Ingredients:

  • Carrots: Peel and boil the carrots until just tender (about 10–15 minutes). Once cooled, dice into small cubes.
  • Eggs: Hard-boil the eggs (about 10 minutes in boiling water). Let them cool, peel, and chop them.
  • Ham: Dice into small bite-sized cubes.
  • Red bell pepper: Wash, remove seeds, and finely chop.

2. 

Combine the Veggies and Protein:

In a large mixing bowl, combine:

  • Diced carrots
  • Chopped eggs
  • Diced ham
  • Chopped red bell pepper
  • Drained peas
  • Drained corn

Make the Dressing:

In a small bowl, mix together:

  • 3 tablespoons mayonnaise
  • 3 tablespoons natural yogurt
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Stir until smooth and creamy.

Mix the Salad:

Pour the dressing over the salad ingredients. Gently mix until everything is evenly coated. Taste and adjust seasoning if needed (a bit more salt, pepper, or even a squeeze of lemon juice if you like it tangier).

Chill and Serve:

  • Cover the salad and let it chill in the refrigerator for at least 30 minutes before serving.
  • Optional: Garnish with chopped parsley, chives, or an extra slice of boiled egg on top for a festive look.
