Avocado Garlicky Mushroom Toast

Avocado Garlicky Mushroom Toast (2 large slices)

Ingredients

For the mushrooms

250–300 g chestnut mushrooms, sliced

1 clove garlic, crushed

1 tbsp olive oil

A splash of tamari sauce

2 tbsp thyme leaves (fresh preferred)

Black pepper, to taste


For the toast

2 large slices of sourdough or rustic bread

1 ripe avocado

Juice of ½ lemon

Pinch of salt & pepper

Optional: chili flakes or microgreens for garnish





Instructions

1. Cook the Mushrooms

Heat olive oil in a pan over medium heat.

Add garlic, stir briefly, then add mushrooms.

Sauté until golden and softened.

Splash with tamari, sprinkle with thyme, and season with black pepper. Cook for 1–2 minutes more.



2. Prepare the Avocado

In a bowl, mash avocado with lemon juice, salt, and pepper until creamy but still slightly chunky.



3. Toast the Bread

Lightly toast your sourdough slices until golden and crisp.



4. Assemble

Spread avocado mash generously over each slice of toast.

Top with the garlicky mushrooms.

Finish with extra thyme, chili flakes, or microgreens if desired.



5. Serve & Enjoy 🥑🍄✨

Best eaten immediately while warm and toasty.
