A savory, cheesy snack packed with crispy bacon and nutritious spinach — perfect for parties, brunch, or meal prep!
Ingredients:
8 oz thick-cut bacon, diced
20 oz frozen chopped spinach, thawed and well-drained
1/4 cup all-purpose flour
1 cup shredded cheddar cheese
1 cup milk
3 large eggs
1/2 teaspoon baking powder
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and black pepper, to taste
Instructions:
1. Cook the bacon – In a skillet over medium heat, cook diced bacon until crispy. Remove and drain on paper towels.
2. Preheat oven – Set oven to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
3. Prep the spinach – Squeeze thawed spinach very well to remove excess water.
4. Mix dry ingredients – In a large bowl, whisk together flour, baking powder, garlic powder, onion powder, salt, and pepper.
5. Make the batter – In another bowl, beat eggs and milk until smooth. Gradually stir wet ingredients into dry, then fold in spinach, bacon, and cheddar cheese.
6. Bake – Pour mixture into the prepared baking dish and spread evenly. Bake for 30–35 minutes, until golden and set.
7. Cool & cut – Let cool slightly before slicing into squares. Serve warm or at room temperature.
