A savory, cheesy snack packed with crispy bacon and nutritious spinach—perfect for brunch, parties, or meal prep!
Ingredients:
8 oz thick-cut bacon, diced
20 oz frozen chopped spinach, thawed & well-drained
¼ cup all-purpose flour
1 cup shredded cheddar cheese
1 cup milk
3 large eggs
½ teaspoon baking powder
¼ teaspoon garlic powder
¼ teaspoon onion powder
Salt & black pepper, to taste
Instructions:
1. Cook the bacon – In a skillet over medium heat, cook diced bacon until crispy. Remove and drain on paper towels.
2. Preheat oven – Set to 350°F (175°C) and lightly grease a 9×9-inch baking dish.
3. Prep spinach – Squeeze spinach well to remove as much moisture as possible.
4. Mix dry ingredients – In a large bowl, whisk together flour, baking powder, garlic powder, onion powder, salt, and pepper.
5. Make the batter – In another bowl, whisk eggs and milk until smooth. Stir into the dry mixture, then fold in spinach, bacon, and cheese.
6. Bake – Pour mixture into prepared dish, spread evenly, and bake for 30–35 minutes until golden and set.
7. Cool & cut – Let rest a few minutes before slicing into squares. Serve warm or at room temperature.
