Baked Cheese Sandwiches Recipe

Ingredients (for 6 sandwiches):
12 slices of sandwich bread

2 cups shredded mozzarella cheese (or a mix of mozzarella and cheddar)

1 cup grated cheese for topping (Gruyère, cheddar, or mozzarella)

3 tablespoons mayonnaise

2 tablespoons butter, softened

1 tablespoon all-purpose flour

1 cup milk

Salt and pepper to taste

Optional: sliced ham or turkey for filling

Instructions:
1. Make the Cheese Sauce:
In a saucepan, melt the butter over medium heat.

Stir in the flour and cook for 1–2 minutes to form a roux.

Gradually whisk in the milk, stirring continuously until smooth and thickened.

Add salt, pepper, and 1.5–2 cups of shredded cheese. Stir until melted and smooth.

Remove from heat and let it cool slightly. Mix in mayonnaise for extra creaminess (optional but recommended).

2. Assemble the Sandwiches:
Preheat your oven to 375°F (190°C).

On a baking tray lined with parchment paper, place 6 slices of bread.

Spread a generous amount of the cheese sauce on each slice.

(Optional) Add a slice of ham or turkey if you prefer a meaty version.

Top with the remaining 6 slices of bread.

Spread a thin layer of cheese sauce on the top of each sandwich.

Sprinkle extra grated cheese over the tops for that golden cheesy crust.

3. Bake:
Bake in the preheated oven for 15–20 minutes, or until the tops are golden and bubbly.

For extra browning, you can broil for the last 2–3 minutes (watch closely to avoid burning).

4. Serve:
Let the sandwiches rest for 2–3 minutes before serving.

Slice in halves and enjoy warm.
