Ingredients: 6 cups Rice Krispies cereal 1/4 cup unsalted butter 1 (10 oz / 280 g) bag mini marshmallows 1/2 cup mashed ripe banana (about 1 medium banana) 1 teaspoon vanilla extract 1/4 teaspoon salt Optional: 1/2 cup dried banana chips or small banana slices (for texture and flavor) Fresh banana slices (for garnish, added just before serving)
Instructions: Prepare the pan Grease a 9×9-inch or 9×13-inch baking dish with butter or nonstick spray. Melt butter and marshmallows In a large saucepan over low heat, melt the butter. Add the mini marshmallows and stir continuously until melted and smooth. Add banana and flavor Stir in the mashed banana, vanilla extract, and salt. Continue to cook on low heat for another 1–2 minutes to combine (don’t overcook, or the banana flavor may dull). Mix with cereal Remove from heat. Quickly stir in the Rice Krispies cereal and optional banana chips until evenly coated. Press into pan Gently press the mixture into the prepared pan using a greased spatula or parchment paper. Avoid pressing too hard so the treats stay light and chewy. Cool and garnish Let cool at room temperature for at least 1 hour. Just before serving, top with fresh banana slices if desired. Cut and serve Slice into squares and enjoy. Best eaten the same day if topped with fresh bananas.
Storage Tip: Without fresh banana on top, these can be stored in an airtight container at room temperature for up to 2 days. If using fresh banana slices, add them just before serving to avoid browning.
