Cajun Pasta



Ingredients

8 oz pasta (penne or fettuccine)
2 tbsp olive oil
1 lb shrimp, peeled and deveined
1 bell pepper, sliced
1 onion, diced
3 cloves garlic, minced
1 cup heavy cream
1 tbsp Cajun seasoning
Salt and pepper to taste
Green onions for garnish

Directions

Cook the pasta according to package instructions; drain and set aside. In a large skillet, heat olive oil over medium heat. Add the shrimp and cook until pink; remove and set aside. In the same skillet, add bell pepper, onion, and garlic. Sauté until tender. Stir in the heavy cream and Cajun seasoning; let simmer. Add cooked pasta and shrimp back into the skillet. Mix well and season with salt and pepper. Garnish with green onions before serving.
