- ΒΎ cup plant-based milk (almond, soy, oat, etc.)
- 1 tbsp lemon juice or apple cider vinegar
- 1 tsp vanilla extract
- 2 tbsp oil or nut butter (optional but adds richness)

- ΒΌ cup chopped nuts (walnuts, almonds)
- 2 tbsp raisins or chopped dates

π³ Cooking Method: Stovetop or Steamed
Method 1: Stovetop in a Pan (Like Pancake-Cake)
- Prepare a non-stick pan: Grease it lightly with oil or line with parchment paper.
- Mix dry ingredients in one bowl.
- Blend or mash banana and mix with wet ingredients in another bowl.
- Combine wet and dry ingredients. Fold in carrots and add-ins.
- Pour batter into pan, cover with a lid.
- Cook on very low heat for 25β35 minutes, until firm and a toothpick comes out clean. Flip carefully if needed to cook both sides, or brown just the bottom.
- Let cool slightly before serving.
Method 2: Steamed (Like a Pudding Cake)
- Grease a round or square heat-safe container or tin.
- Follow steps 2β4 above to prepare the batter.
- Pour batter into the container, tap to remove air bubbles.
- Place in a steamer (or a pot with a trivet and water), cover with foil or lid.
- Steam for 40β50 minutes on medium heat. Check with a toothpick.
- Cool, then remove from mold.
