Cheesy Grated Potato Casserole



Ingredients:

4 large russet potatoes, peeled and grated

1 small onion, finely chopped

2 cloves garlic, minced

1 cup sour cream

1 cup cottage cheese

2 cups shredded cheddar cheese (divided)

1 egg, lightly beaten

3 tablespoons butter, melted

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 tablespoons chopped parsley (optional, for garnish)


Instructions:

1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.


2. Peel and grate the potatoes. Pat them dry with paper towels to remove excess moisture.


3. In a large bowl, combine grated potatoes, onion, garlic, sour cream, cottage cheese, 1 cup cheddar cheese, egg, melted butter, salt, pepper, and paprika. Mix until well combined.


4. Transfer mixture to the prepared baking dish, spreading evenly.


5. Sprinkle the remaining 1 cup of cheddar cheese over the top.


6. Bake uncovered for 35–40 minutes, until golden brown and bubbly on top.


7. Let rest for 5 minutes before serving. Garnish with parsley if desired.






This makes a super cheesy, creamy, and crispy potato dish that works as a side or even a main.
