For the Filling:
120 g mozzarella cheese (cubed or shredded)
For the Topping (optional but amazing):
½ cup ketchup
2 tbsp brown sugar
1 tsp Dijon mustard

Instructions
1. Preheat oven to 190°C (375°F). Grease a mini muffin tin or line with parchment squares.
2. Make the Meat Mixture
In a large bowl, combine breadcrumbs and milk. Let sit for 2–3 minutes.
Add ground beef, egg, onion, garlic, salt, pepper, Worcestershire, and Italian seasoning. Mix until just combined (don’t overmix).
3. Form the Bites
Take a tablespoon of meat mixture, flatten it slightly in your hand, place a cube of mozzarella in the center, and roll into a ball, sealing the cheese inside.
Place in muffin tin or on a parchment-lined baking sheet.
4. Top Them (Optional)
Mix ketchup, brown sugar, and mustard. Spoon a little glaze on top of each meatloaf bite.
5. Bake
Bake for 18–22 minutes, until cooked through (internal temp 160°F/71°C).
Let cool for 5 minutes before serving so the cheese sets.
6. Serve & Enjoy
