** Ingredients:**
4–6 large flour tortillas (burrito-sized work great)
1–2 cups cooked chicken (rotisserie, shredded, or grilled)
4–6 strips bacon, cooked and crumbled
1–1½ cups shredded cheese (cheddar, Monterey Jack, or a blend)
~½ cup ranch dressing (plus extra for dipping)
Optional: dry ranch seasoning, diced red onion, scallions, or cilantro
** Instructions:**
1. Mix the filling – In a bowl, combine chicken, bacon, cheese, ranch dressing, and a packet of dry ranch seasoning if you like extra punch.
2. Assemble the quesadillas – Spread the mixture over half of each tortilla, leaving space at the edges. Fold the tortilla over to form a half-moon.
3. Cook ‘em golden – Warm a skillet over medium heat with cooking spray or butter. Cook each quesadilla for ~2 minutes per side, until the tortilla is golden and the cheese is melted.
