Cilantro-Lime Avocado Salsa

Ingredients:

6 tomatillos, husked and rinsed

1 jalapeño (optional, for added spice)

2 ripe avocados, peeled and pitted

A handful of fresh cilantro

1/2 cup crema mexicana

1 tablespoon minced garlic

1 tablespoon chicken bouillon powder

1 tablespoon salt (or to taste)

Juice of 2 limes

1/4 of a white onion

Instructions:

1. Boil the Tomatillos:
In a small pot, boil the tomatillos and jalapeño (if using) in water for about 5–7 minutes, or until the tomatillos turn a dull green and soften. Remove from heat and let cool slightly.

2. Blend the Ingredients:
In a blender or food processor, combine the cooked tomatillos and jalapeño, avocado, cilantro, crema mexicana, garlic, bouillon powder, salt, lime juice, and onion.

3. Blend Until Smooth:
Blend until the salsa is completely smooth and creamy. Taste and adjust salt or lime juice as needed.

4. Chill and Serve:
Transfer to a bowl, cover, and refrigerate for 30 minutes to let the flavors meld. Serve chilled with chips, tacos, grilled meats, or as a topping for your favorite dishes.
