Soft, fluffy, and coated in sweet cinnamon sugar—like French toast, but in muffin form!
Ingredients:
2 cups all-purpose flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
½ cup (1 stick) unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar/lemon juice)
1 teaspoon vanilla extract
For the cinnamon sugar coating:
½ cup unsalted butter, melted
¾ cup granulated sugar
1½ teaspoons ground cinnamon
Instructions:
1. Preheat oven – Set oven to 350°F (175°C) and line a muffin tin with paper liners or grease well.
2. Mix dry ingredients – In a bowl, whisk together flour, baking powder, baking soda, salt, and cinnamon.
3. Cream butter & sugar – In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, beating well.
4. Add wet ingredients – Mix in vanilla and buttermilk until combined.
5. Combine & fill – Gradually add dry ingredients to the wet mixture, stirring just until blended. Fill muffin cups about ¾ full.
6. Bake – Bake 18–22 minutes, or until a toothpick comes out clean. Let cool slightly.
7. Coat in cinnamon sugar – Dip each warm muffin in melted butter, then roll in cinnamon sugar mixture until fully coated.
8. Serve – Enjoy warm for a melt-in-your-mouth breakfast treat!
