Garlic Shrimp Crostini with Avocado
Ingredients
12 large shrimp, peeled and deveined
1 baguette, sliced into ½-inch rounds
2 tbsp olive oil (plus extra for brushing bread)
3 cloves garlic, minced
1 ripe avocado
1 tbsp lemon juice
Salt and pepper to taste
1 tbsp chopped fresh parsley (optional)
Chili flakes (optional, for heat)
Instructions
1. Prepare the bread
Preheat your oven to 180°C (350°F).
Brush the baguette slices with olive oil and place them on a baking sheet.
Toast in the oven for 6–8 minutes until lightly golden and crisp.
2. Cook the shrimp
Heat 2 tbsp olive oil in a pan over medium heat.
Add the minced garlic and sauté for 30 seconds until fragrant (do not burn).
Add shrimp, season with salt, pepper, and chili flakes (if using).
Cook for 2–3 minutes per side until pink and opaque. Remove from heat.
3. Prepare the avocado spread
In a small bowl, mash the avocado with lemon juice, salt, and pepper until creamy.
4. Assemble the crostini
Spread a generous layer of avocado mixture on each toasted baguette slice.
Place one shrimp on top.
Garnish with chopped parsley and a drizzle of olive oil.
5. Serve immediately
Best enjoyed warm as an appetizer or party snack.
