Garlic Shrimp Pasta
Ingredients
1 lb medium shrimp, deveined & tails removed
1 lb spaghetti noodles (or adjust to preference)
6–8 garlic cloves, minced (adjust to taste)
¼ cup butter
2–3 tbsp olive oil (about 3 drizzles)
1 tsp Italian seasoning (or to taste)
Salt & black pepper, to taste
½ cup grated Parmesan cheese (optional but recommended)
Fresh parsley, chopped (for garnish)
Juice of ½ lemon (optional, for freshness)
—
Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil.
Cook spaghetti according to package directions until al dente.
Drain, reserving ½ cup of pasta water, and set aside.
2. Cook the Shrimp
In a large skillet, heat olive oil and half the butter over medium heat.
Add shrimp, season with salt, pepper, and Italian seasoning.
Cook 2–3 minutes per side until pink and opaque. Remove and set aside.
3. Make the Garlic Sauce
In the same skillet, add remaining butter and garlic.
Sauté for 1–2 minutes until fragrant (don’t burn the garlic).
Add a splash of pasta water and stir to create a light sauce.
4. Combine Everything
Toss the cooked spaghetti into the skillet, coating with garlic butter sauce.
Add shrimp back in, mixing gently.
Stir in Parmesan cheese and adjust seasoning with more salt, pepper, or lemon juice.
5. Serve
Plate pasta, garnish with parsley, and serve warm.
