German Potato Pancakes

Ingredients:

4 medium potatoes, peeled & grated

1 small onion, grated

2 large eggs

3 tbsp all-purpose flour

½ tsp salt (or to taste)

¼ tsp black pepper

Vegetable oil, for frying


Instructions:

1. Grate potatoes and onion, then squeeze out excess liquid using a clean kitchen towel.


2. In a bowl, mix potatoes, onion, eggs, flour, salt, and pepper until combined.


3. Heat a thin layer of oil in a large skillet over medium-high heat.


4. Scoop about ¼ cup of mixture for each pancake, flatten slightly, and fry 3–4 minutes per side until golden brown.


5. Drain on paper towels and serve hot with sour cream or applesauce.
