Golden Mediterranean Salmon Patties with Feta & Spinach



Ingredients:

1 lb cooked salmon, flaked (fresh or canned, drained)

1 cup cooked spinach, squeezed dry and chopped

1/2 cup crumbled feta cheese

1/4 cup red onion, finely chopped

1 garlic clove, minced

1 egg, lightly beaten

1/3 cup breadcrumbs (or almond flour for gluten-free)

1 tbsp lemon juice

1 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper
