Homemade Pop Rocks



Ingredients:
1 cup granulated sugar
1/2 cup light corn syrup
1/4 cup water
1/4 teaspoon baking soda
1 teaspoon flavored extract (such as raspberry, orange, or cherry)
2 to 3 drops food coloring (optional)
1/4 teaspoon citric acid (for a tangy pop)
1/4 teaspoon baking soda (for the fizz)

Instructions:
Line a baking sheet with parchment paper and lightly grease it.
In a saucepan over medium heat, combine the sugar, corn syrup, and water. Stir constantly until the sugar dissolves, then stop stirring.
Let the mixture reach 300°F (hard crack stage) on a candy thermometer.
Remove from heat and quickly stir in the baking soda, citric acid, flavoring, and food coloring if using.
Immediately pour the mixture onto the prepared baking sheet and let it cool completely.
Once hardened, break the candy into tiny shards using a spoon or rolling pin.
Store in an airtight container to keep the fizz fresh. Enjoy the pop!
