Honey Bacon Roasted Potatoes


Ingredients:
– 1 lb baby potatoes, halved
– 6 slices of bacon, chopped
– 2 tbsp honey
– 2 tbsp olive oil
– Salt and pepper to taste
– Fresh parsley for garnish
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, toss together the halved baby potatoes, chopped bacon, honey, olive oil, salt, and pepper.
3. Spread the mixture out on a baking sheet in a single layer.
4. Roast in the oven for about 30-35 minutes, or until the potatoes are golden brown and crispy, stirring halfway through.
5. Garnish with fresh parsley before serving.
