Mediterranean Chickpea Salad



Ingredients:
– 1 can chickpeas (drained and rinsed)
– 1 cucumber (diced)
– 1 cup cherry tomatoes (halved)
– 1/4 red onion (thinly sliced)
– 1/4 cup Kalamata olives (sliced)
– 1/4 cup feta cheese (crumbled)
– 2 tbsp olive oil
– 1 tbsp red wine vinegar
– 1 tsp dried oregano
– Salt and pepper (to taste)
– Fresh parsley (optional, for garnish)

**Instructions:
1. In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, olives, and feta.
2. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Garnish with fresh parsley (optional) and serve chilled.

Perfect for a light lunch or side dish!
