1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.
2. In a large bowl, combine ground chicken, Parmesan, breadcrumbs, eggs, garlic, garlic powder, Italian seasoning, salt, and pepper. Mix until just combined (do not overmix).
3. Transfer mixture into the loaf pan, pressing gently into shape.
4. In a small bowl, mix mayonnaise, Parmesan, and Italian seasoning. Spread evenly over the top of the meatloaf.
5. Bake for 45–55 minutes, until internal temperature reaches 165°F (74°C).
6. Let rest 10 minutes before slicing. Garnish with parsley if desired.
