Mexican White Trash Casserole



Ingredients:
– 1 bag Nacho Doritos, crushed
– 2 cups shredded chicken or ground beef
– 2 cups shredded cheese (plus more for topping if desired)
– 1 can (10.75 oz) cream of chicken soup
– 1 can Rotel tomatoes (undrained)
– 1/2 cup sour cream
– 1/2 cup milk
– 1/2 package taco seasoning (adjust to taste)

Instructions:
1. Prepare the Oven and Dish:
Preheat your oven to 350°F (175°C). Spray a 2-quart casserole dish with nonstick cooking spray.

2. Mix the Filling:
In a large bowl, combine shredded chicken or ground beef, 1 cup cheese, cream of chicken soup, Rotel tomatoes, sour cream, milk, and taco seasoning. Stir until well blended.

3. Layer the Casserole:
Place half of the crushed Doritos in the bottom of the casserole dish. Top with half of the meat mixture. Repeat with another layer of Doritos and the remaining meat mixture.

4. Add Cheese:
Optionally, sprinkle additional shredded cheese on top for a cheesy crust.

5. Bake:
Cover the casserole with aluminum foil and bake in the preheated oven for 35 minutes. If using a larger pan or doubling the recipe, bake for 45 minutes.

6. Rest and Serve:
Once done, remove from the oven and let it sit for a few minutes. Serve warm.
