Pineapple Coconut Cheesecake Bars



Ingredients:

1 1/2 cups graham cracker crumbs

1/4 cup melted butter

2 tbsp sugar

16 oz cream cheese, softened

1/2 cup sugar

2 eggs

1 tsp vanilla extract

1 cup crushed pineapple, drained

1/2 cup shredded sweetened coconut

Preparation:

Preheat oven to 325°F (165°C).

Mix graham crumbs, melted butter, and 2 tbsp sugar; press into a greased 8×8-inch pan.

Beat cream cheese and 1/2 cup sugar until smooth; mix in eggs and vanilla.

Fold in pineapple and coconut, then pour over crust.

Bake for 30–35 minutes until set.

Cool completely, then chill before cutting into bars.
