1️⃣ Roast the Sweet Potatoes:
Preheat oven to 400°F (200°C). Toss sweet potato slices with olive oil, smoked paprika, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway. 2️⃣ Cook the Sausage & Spinach:
Heat 1/2 tbsp olive oil in a pan over medium heat. Cook sliced sausage for 3-4 minutes until browned. Add spinach and sauté for 1-2 minutes until wilted. 3️⃣ Scramble the Eggs:
Whisk eggs with salt and pepper. Heat butter in a pan over medium-low heat. Add eggs and gently stir until soft and fluffy. 4️⃣ Assemble the Bowl:
