Juicy chicken breasts filled with a creamy ricotta-spinach mixture, then baked to perfection — a delicious and impressive meal!
Ingredients:
4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup fresh spinach, chopped
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 clove garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1 tablespoon olive oil
Instructions:
Preheat your oven to 375°F (190°C).
In a bowl, mix ricotta cheese, chopped spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
Cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
Stuff each chicken breast with the ricotta-spinach mixture and secure with toothpicks if needed.
Season the outside of the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
Transfer the chicken to a baking dish and bake for 20–25 minutes, or until cooked through.
Let rest for a few minutes before serving.
