Shrimp Grilled Cheese with Garlic Bread
Ingredients
4 slices thick bread (sourdough or Texas toast works great)
½ lb shrimp, peeled and deveined
3 tbsp butter, melted
2 cloves garlic, minced
1 tbsp olive oil
1 cup shredded mozzarella (or a mix of mozzarella + cheddar)
2 tbsp Parmesan cheese, grated
1 tbsp parsley, chopped
Salt & black pepper, to taste
Pinch of red pepper flakes (optional, for heat)

Instructions
1. Cook the Shrimp
Heat olive oil in a skillet over medium heat.
Add shrimp, season with salt, pepper, and red pepper flakes.
Cook 2–3 minutes per side until pink and opaque. Remove, chop into bite-sized pieces, and set aside.
2. Prepare Garlic Butter
In a small bowl, mix melted butter with garlic and parsley.
Brush one side of each bread slice generously with the garlic butter mixture.
3. Assemble Sandwiches
Place 2 slices of bread (butter side down) in a skillet or griddle.
Sprinkle with mozzarella and Parmesan.
Add shrimp pieces evenly over the cheese.
Top with more cheese, then place remaining bread slices on top (butter side up).
4. Grill
Cook over medium-low heat until bread is golden and crispy, and cheese is melted (about 3–4 minutes per side).
Press gently with a spatula to help melt the cheese.
5. Serve
Slice in half, garnish with extra parsley if desired, and enjoy hot and melty!
