Slow Cooker Beef Ramen Noodles



Ingredients

1 pound ground beef

1 cup matchstick carrots

1 red bell pepper, sliced

2–3 scallions, roughly chopped

3 garlic cloves, minced

½ cup low-sodium soy sauce

½ cup brown sugar

4 cups beef broth (low sodium preferred)

2 packs ramen noodles (discard seasoning packets)

1 tablespoon sesame oil (optional, for flavor)

Sesame seeds + extra scallions (for garnish)





Instructions

1. Cook the Beef

In a skillet, brown the ground beef over medium heat until fully cooked.

Drain excess fat, then transfer beef to your slow cooker.



2. Load the Slow Cooker

Add carrots, bell pepper, scallions, and garlic to the beef.

Stir in soy sauce, brown sugar, and beef broth.

Mix well to combine.



3. Cook Low and Slow

Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours.



4. Add the Noodles

About 30 minutes before serving, stir in ramen noodles.

Cover and cook until noodles are tender.



5. Finish & Serve

Drizzle with sesame oil for extra depth of flavor.

Garnish with sesame seeds and fresh scallions.

Serve hot and enjoy!
