Spicy Garlic Beef Noodles



10 oz wide rice noodles (or fettuccine)
1 lb ground beef
1 tbsp vegetable oil
5 garlic cloves, minced
1 tbsp fresh ginger, grated
2 tbsp soy sauce
1 tbsp hoisin sauce
1 tbsp chili garlic sauce (adjust to taste)
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp brown sugar
2 green onions, chopped
1 tsp sesame seeds (optional)

Cook noodles according to package instructions. Drain and set aside.

In a skillet, heat oil over medium heat. Add garlic and ginger, cook until fragrant (about 1 minute).

Add ground beef, breaking it up as it browns. Cook until no longer pink.

Stir in soy sauce, hoisin, chili garlic sauce, vinegar, sesame oil, and brown sugar. Simmer for 5 minutes until thickened.

Add cooked noodles to the skillet. Toss to coat. Garnish with green onions and sesame seeds.
