Stove Top Stuffing Meatloaf

Ingredients:

For the Meatloaf:

• 2 pounds ground beef (80% lean recommended)

• 2 large eggs

• 1 package (6 oz) Stove Top Stuffing Mix (any flavor)

• 1 cup chicken broth (or water)

• 3/4 cup ketchup (divided: 1/4 cup for the meatloaf, 1/2 cup for the glaze)

For the Glaze:

• 2 tablespoons brown sugar

• 1 teaspoon mustard

Instructions:

1. Preheat Oven:

◦ Preheat your oven to 350°F (175°C).

◦ Line a baking sheet with foil and place a wire rack on top, or shape the loaf directly on a foil-lined tray for better glaze coverage.

2. Prepare the Stuffing Mix:

◦ In a large bowl, combine the Stove Top stuffing mix with chicken broth.

◦ Let it sit for 5 minutes to allow the liquid to absorb fully.

3. Combine the Meatloaf Ingredients:

◦ Add the ground beef, eggs, and 1/4 cup of ketchup to the softened stuffing mix.

◦ Gently mix until everything is fully incorporated. Avoid overmixing to keep the meatloaf tender.

4. Shape the Meatloaf:

◦ Shape the mixture into a compact loaf and place it on the prepared tray or wire rack.

◦ Smooth the top and sides to form a neat loaf.

5. Prepare the Glaze:

◦ In a small bowl, mix the remaining 1/2 cup ketchup, brown sugar, and mustard.

◦ Spread a thick, even layer of glaze over the top and sides of the meatloaf.

6. Bake the Meatloaf:

◦ Bake in the preheated oven for 45–55 minutes, or until the internal temperature reaches 160°F (70°C).

◦ For an extra glossy finish, add another layer of glaze during the last 10 minutes of baking.

7. Rest and Serve:

◦ Let the meatloaf rest for 5 minutes before slicing. This helps retain its shape and juices.
